How to cook polenta?
1 cup Radiant Gourmet Polenta
2 cups vegetable broth
2 cups water
1 tsp crushed garlic
1 tbsp Radiant e/v coconut oil
2 tbsp Radiant nutritional yeast
Bring water/broth to a boil. Add polenta slowly and stir constantly. Reduce heat. Stir in garlic and oil. Continue to stir for about 20 minutes, adding water as it gets too thick to stir. The polenta will be thick and creamy. Sprinkle nutritional yeast. Chilled leftovers can be sliced and pan-fried or baked.
