Nasi Lemak Rendang Ayam
Nasi Lemak is a staple Malaysian favourite - and it's even served during festive seasons! With Aidilfitri around the corner, here's a healthy twist on the delicious classic Chicken Rendang~

Resipi Nasi Lemak Rendang Ayam
BAHAN NASI LEMAK | INGREDIENTS
1 biji bawang besar | 1 big onion
2 inci halia | 2inch ginger
2 batang serai | 2 pcs of lemongrass
2 helai daun pandan | 2 pcs of pandan leaves
2 cawan Cambodian Beras Perang | 2cups Cambodian Brown Rice
1/2 kotak santan | ½ box of coconut milk
Air secukupnya | 4cups water
1 sudu besar minyak kelapa | 1tbsp extra virgin coconut oil
Sedikit garam | Pinch of salt
CARA | INSTRUCTIONS
Basuh beras dahulu bagi bersih. Satukan kesemua bahan dalam ricecooker dan biarkan masak.
Wash the rice and then combine all the ingredients into the rice cooker and set to cook.
BAHAN RENDANG AYAM | INGREDIENTS
Bahan Kisar | To Blend
4 biji bawang merah kecil | 4 small red onions
1 biji bawang besar | 1 big onion
3 ulas bawang putih | 3pcs garlic
3 inci lengkuas | 3inch galangal
3 inci halia | 3inch ginger
3 batang serai | 3pcs lemongrass
3 inci kunyit hidup | 3inch turmeric
1 biji cili merah dan 6 biji cili padi | 1 red chili & 6 birds eye chili
Bahan lain | others
Organic Minyak Masak Kelapa | Cooking coconut oil
1/2 cawan cili kisar | ½ cup ground chili
3 helai daun limau purut | 3pcs kaffir lime leaves
1/2 ekor ayam | ½ chicken
2 keping asam gelugor | 2pcs tamarind slice
1 kotak santan | 1 box coconut milk
2 sudu kerisik | 2tbsp toasted, pounded coconut
Garam dan gula secukupnya | Salt & sugar to taste
Hirisan daun kunyit | Slices of turmeric leaves
CARA | INSTRUCTIONS

Kisar kesemua bahan kisar
Blend all the items ‘to blend’

Tumis dahulu bahan kisar hingga sedikit masak.
Pour a little cooking coconut oil and fry the blended items.

Masukkan cili kisar dan kerisik
Add in the blended chilies and toasted coconut

Gaul dan kacau bagi rata
Mix until fully combined

Masukkan ayam, daun limau purut, asam keping dan santan
Add in the chicken, kaffir leaves, tamarind and coconut milk

Biarkan masak sehingga kuah pekat sedikit. Perasakan dengan garam secukupnya
Allow to cook until thicken slightly, then add in salt & sugar to taste

Biarkan bahan betul-betul masak sehingga pecah minyak. Kuah dah agak pekat & pecah minyak. Masukkan daun kunyit.
Once it has started to boil and the oil breaks, add in the turmeric leaves

Siap untuk dihidang!
Ready to serve! Plate it with brown rice, boiled eggs and cucumber slices for a complete meal~
